Description
Filodivino's white “Matto” is made exclusively from Verdicchio grapes and carries a personal and affectionate story: it is dedicated to the owner's dog, now passed away, to whom the estate wanted to pay tribute with one of its most representative labels. A Verdicchio of remarkable complexity on both nose and palate, it stands out for its depth and its ability to evolve over time, offering great rewards if well stored. The vineyards surround the winery on the hills of San Marcello, in the province of Ancona – you could call them “zero-kilometre grapes”! For this label, bunches are selected from the best plots, with the oldest vines, around 60 years old, and low yields of around 50 quintals per hectare. The roots reach down into soils of calcareous clay and sand at an altitude of between 200 and 230 metres, all farmed according to the principles of organic viticulture. The harvest is carried out by hand in small crates to safeguard grape quality. In the cellar, fermentation takes place in stainless steel tanks with selected indigenous yeasts, followed by a long nine-month ageing on the fine lees, again in steel tanks. In the glass it shows a brilliant straw yellow colour, while on the nose it expresses an intense and refined aromatic profile of white flowers, peach blossom and citrus. On the palate it is clean and dry, with a taut and precise sip, supported by a marked minerality that accompanies every mouthful. It is a wine that pairs naturally with fish starters, seafood pasta and risotto and white meats, interpreting this noble variety with authenticity and character.
