Description
This red wine from the Blasi winery is made from 100% Cabernet Franc grapes, which are grown in the Villa Pace vineyard right in front of the winery. This vineyard is the most viewed and photographed, as it is always in plain sight. It is the only vineyard with well-drained fill soil and the only one equipped with an irrigation system for this reason. Facing south/southwest, it is located at an altitude of 350–400 metres above sea level. The spurred cordon training system is used, a technique that contributes to the careful management of the growth and production of the vines.
The winemaking process begins with manual grape harvesting, followed by crushing and destemming. The free-run juice is then conveyed into steel tanks. Alcoholic fermentation then takes place in contact with the skins, conducted by selected yeasts and maintained at a temperature between 18 and 23 °C for about 15–20 days. The wine then undergoes malolactic fermentation in steel tanks to reduce acidity and give it a rounder, smoother taste.
After this, the wine ages in steel tanks on fine lees for about 5–6 months, followed by a further 8 months of refinement in large wooden barrels. Finally, the wine is kept in the bottle for at least eight to ten months before it is ready to be tasted. The bouquet opens with intense hints of ripe black fruit, highlighting the wine's richness and complexity. There are also balsamic notes that give the wine a unique aromatic character, while subtle hints of chocolate add an enveloping, decadent quality. On the palate, the wine is rich and enveloping, with well-structured tannins that contribute to its longevity. Aging in wood gives the wine further depth and tone, enhancing the tannins. Its excellent structure makes it extremely versatile, adapting to different occasions and flavourful food pairings.
