Description

This wine is the result of the vinification of 100% Cabernet Franc grapes from the Villa Pace vineyard, right in front of the winery, the one that everyone sees and photographs the most, the one that is always in front of you. It is the only one with very well drained topsoil and therefore the only one with an irrigation system. The exposure is south/south-west at an altitude of 350-400m above sea level. The training system used is the spurred cordon, a technique that contributes to the careful management of the growth and production of the vines. The vinification process begins with the manual harvesting of the grapes, which are then crushed, destemmed and the free-run juice transferred to steel tanks. Alcoholic fermentation takes place in contact with the skins using selected yeasts, at a temperature of between 18 and 23°C for about 15-20 days. The wine then undergoes malolactic fermentation in steel vats, a process that reduces the acidity and gives the wine a rounder, softer flavour. After this phase, the wine matures on the fine lees for about 5-6 months in steel vats, followed by a refining period of about 8 months in large wooden barrels. Finally, the wine is aged in bottle for at least 8-10 months before it is ready for tasting. The olfactory bouquet opens with intense notes of ripe black fruits, highlighting the richness and complexity of the bouquet. Balsamic notes are also present, giving the wine a unique aromatic character, while subtle nuances of chocolate add an enveloping and decadent element. On the palate, the wine is rich and enveloping, with well-structured tannins that contribute to its longevity. Ageing in wood adds depth and tone, and enhances the tannins. Its excellent structure makes it extremely versatile, suitable for a wide range of occasions and savoury food pairings.
