Description
Filodivino's “Soara” is the highest and most ambitious expression of Lacrima, a wine that sums up the path the estate has taken in telling the story of this territory through one of its most distinctive grapes. It is the result of a clear vision, built on respect for nature and an essential approach in which every choice, from vineyard to cellar, aims to enhance varietal purity and the vitality of the wine. The grapes come from vineyards in Ostra, two small plots with vines at least 30 years old, facing south and north, at 220-240 metres above sea level, on predominantly clay soils. The harvest is by hand, in small crates, with yields always kept very low and a careful selection of the best bunches. In the cellar, winemaking begins with destemming, after which the grapes ferment in stainless steel tanks, macerating on the skins for about a week. Ageing is divided between steel tanks on the fine lees for around 85% of the wine and truncated-cone oak vats for the remaining 15%, for a period of about twelve months, followed by a further six months' rest in the bottle. In the glass “Soara” shows an intense ruby red colour with violet highlights, a deep and multi-layered interpretation of Lacrima that brings out its aromatic complexity and structure to the full without ever losing freshness and balance. On the nose, intense aromas of red fruits and red flowers emerge, intertwined with deeper, more enveloping nuances. The palate is broad and structured, rich yet harmonious, with an elegant texture leading to a long, persistent finish.
