The oldest is certainly the ancestral method, which originated in France and is still used today. During fermentation, the must/wine can be bottled so that it continues to ferment in the bottle, creating those much-loved bubbles. Or the fermentation can be slowed down and then stopped by lowering the temperature of the fermentation tank to obtain a wine with residual sugar. It is then bottled and, thanks to the sugar present, a new fermentation takes place inside the bottle, guaranteeing the bubbles! If you want to enjoy an informal evening with friends, an aperitif or a dinner, we recommend the old method! It is a wine to be drunk young, it will win you over with its delicate bubbles that will tickle your palate! The Charmat method also produces sparkling wines, in which case the first fermentation takes place in special tanks and the wine, called the base, will have no residual sugar and will be dry. At this point, the base wine is transferred to tanks capable of maintaining high pressure, called autoclaves, and must or sugar and yeast are added. This is where the second fermentation takes place, which is responsible for the formation of the bubbles. The sparkling wine is then bottled. This is the method used to make the world famous Prosecco!
However, for refined, elegant and long-lasting sparkling wines, the classic method is a must! The first fermentation always takes place in special tanks, as with the Charmat method. Sugar or must and yeast are then added to the wine, which is then bottled and left to ferment a second time in the bottle. It is this fermentation that makes the wine sparkling! Generally, the sparkling wine is left to rest on its lees (still in the bottle) for a few months or even years, depending on the type of product desired. Finally, the bottle is uncorked, the yeast and lees are removed and the liqueur d'expédition is added before the bottle is corked again! We recommend opening a bottle of the classic method to celebrate an important event, to toast success or simply to enjoy a special evening, paired with fresh fish dishes or even grilled.
