Grechetto from Cantina Blasi is an elegant, fresh white wine that is pleasant and harmonious on the palate. Its aromatic profile is characterised by enveloping aromas of white fruit, reflecting the uniqueness of this wine.
The vineyard is located on medium-textured clay soils and extends over hilly terrain at an altitude between 300 and 450 metres above sea level. The spurred cordon training system optimises grape quality, ensuring careful production control from cultivation onwards.
In the cellar, the grapes are gently crushed and conveyed to the press. Soft pressing extracts only the free-run juice, which then ferments at a low temperature (between 14 and 16 °C) for around 15 days in steel tanks. Malolactic fermentation is not carried out to preserve the wine's freshness and liveliness.
The wine matures in steel tanks on the fine lees for about 3–4 months, giving it additional complexity and structure. Grechetto is then aged in the bottle for a further 4–5 months to reach its maximum expression of elegance and balance.
This wine is an ideal accompaniment to aperitifs and light meals, complementing their flavours with its freshness and versatility. It offers a unique sensory experience that celebrates the region's winemaking tradition and the mastery of Cantina Blasi.

Cantina Blasi's ‘Cervo Rosso’ is a blend of native Umbrian grapes and Italian and international varieties, such as Sangiovese and Merlot. The grapes are sourced from a selection of vineyards characterised mainly by clayey soils in a hilly area at an altitude ranging from 300 to 450 metres above sea level. The skilful adoption of the spurred cordon training system optimises grape yield, ensuring high-quality bunches. After harvesting, the bunches are carefully crushed and destemmed, and the free-run juice obtained is transferred to steel tanks. Alcoholic fermentation then takes place with the aid of selected yeasts in contact with the skins. The temperature is maintained at between 24 and 28 °C for 8–20 days, with pumping over varying depending on the grape variety. Malolactic fermentation adds complexity and softness to the wine's aromatic profile. The Merlot and Sangiovese varieties are aged in steel tanks for 3–4 months, while the Sagrantino variety is aged for 4–6 months in large French oak barrels. Bottle ageing for at least four to five months completes the process, ensuring that every sip represents the most authentic expression of this international grape variety grown in Umbrian soil. This intense red wine has a medium body and captivates the palate with a warm, enveloping mouthfeel and medium structure with intense tannins and a fresh finish. The nose offers enveloping aromas of ripe red fruit, soft and enriched with fresh notes. This is a wine with character, ideal for long aperitifs and convivial dinners with friends.

The Syrah red wine from Cantina Blasi is made from grapes of the same name, offering a satisfying sensory experience that is both elegant and refined. A faithful representation of its constituent grapes, it is smooth and rounded on the palate, with aromas of ripe red fruit and spices.
The grapes are cultivated according to organic farming principles on the Villa Pace estate, which is characterised by clayey soils and a south/south-west exposure at an altitude of 300–320 metres above sea level. Each bunch grows under the warm embrace of the Umbrian sun and is cradled by hill breezes, which give the wine its character, complexity, and healthiness. After the harvest, the bunches are destemmed in the cellar and fermented in contact with the must for at least 15 days in steel tanks at a controlled temperature of 24–28 °C. Malolactic fermentation reduces the malic acid content. The wine is then aged in large French oak barrels for 18 months, followed by a further 4–5 months in the bottle before release. Ruby red in colour, it is complex on the palate, with a smooth and rounded initial taste and a delicate finish. The aroma develops enveloping notes of blueberries, ripe blackberries and oriental spices. It is particularly suitable for long aperitifs with friends or with well-structured dishes.
