Description

Sauvignon Blanc is the fruit of grapes cultivated with passion in the hills of Umbertide, giving the wine a lively and unique personality. The Petrella vineyard is situated between 200 and 250 metres above sea level, on clayey soil with some gravel. After a meticulous harvest in mid-September, fermentation takes place in steel tanks at a low temperature (between 14 and 16°C) for about 15 days in order to preserve the fresh varietal notes of yellow peach and citrus fruits. The decision not to carry out malolactic fermentation is strategic, preserving the vivacity and sharpness of the flavour profile. Resting in steel tanks on fine lees for 5-6 months adds depth to the wine and prepares it for the subsequent bottle ageing of at least 6 months. This period allows the Sauvignon Blanc to develop, revealing its structure and elegance. Its freshness makes it an extremely versatile wine, suitable for all occasions.
