Description
Cantina Blasi's Merlot is the result of a careful vinification process and is aged for 12 months in large French oak barrels. This ageing process helps to develop aromatic complexity, with enveloping aromas of ripe red fruit, enriched by intense tannins that give the wine character and structure. The grapes are selected from the Altona parcel, which is characterised by clayey soils in a hilly terrain at an altitude of between 300 and 450 metres above sea level. The system of spurred cordon training, wisely adopted, optimises the grape yield and ensures a high quality of the grapes. After harvesting, the grapes are carefully crushed and destemmed, and the precious must obtained is transferred to steel tanks. Here the alcoholic fermentation takes place with the help of selected yeasts, a careful and delicate process that takes place in contact with the skins, at a constant temperature of between 24 and 28°C, for a period of approximately 15-20 days, with pumping over varying from one or two per day to one every 4 hours, depending on the stage. Malolactic fermentation adds further complexity to the wine's aromatic profile and softness. Ageing takes place in stainless steel vats for about 3-4 months, followed by 12 months in large French oak barrels of 30 or even 80hl. Refinement in bottle for at least 4-5 months completes the process, ensuring that each sip represents the most authentic expression of this international grape variety grown on Umbrian soil.
