The Cococciola DOC wine from the Paride d'Angelo winery is made exclusively from the grapes of the vine of the same name, an authentic Abruzzo rarity. In fact, the Cococciola grape, which has a limited distribution and is shrouded in an aura of mystery as to its origins, has for centuries contributed to the rich ampelographic heritage of Abruzzo and is often used with other white grape varieties, such as Trebbiano d'Abruzzo, to increase their acidity. This white wine is suitable for informal lunches or dinners thanks to its freshness and drinkability, a wine with a delicate olfactory profile of flowers and subtle citrus notes. The young Paride d'Angelo winery takes great care to enhance the traditions of winemaking with an innovative and modern approach, respecting nature, following strict organic farming methods, avoiding the use of pesticides and herbicides, and carrying out as many operations in the vineyard as possible by hand. The vineyards are cultivated using the traditional Abruzzo pergola system, with an average age of 40 years; the vines are planted on clay soils where natural organic fertilisers are used, reflecting the winery's commitment to tradition and quality. After manual harvesting of the Cococciola grapes, the wine is vinified with spontaneous fermentation without sulphites, followed by batonnage on the fine lees for 6 months. After separation from the lees, the wine matures for 3 months in steel tanks and then in the bottle before being released. In the glass, the wine has a pale straw-yellow colour with greenish reflections that underline its freshness and vitality. The palate is characterised by a distinctive freshness and savouriness, accompanied by a dry, enveloping finish that gives the palate a sense of balance. The nose reveals further layers of freshness, with delicate nuances of jasmine flowers, culminating in a mineral and slightly herbaceous finish that underlines its complexity. This wine goes well with light, delicate dishes such as steamed fish, vegetable risottos, grilled fish, savoury pies and fresh fish-based hors-d'oeuvres. Cococciola DOC is an authentic expression of the wine richness of Abruzzo.
