Tajad Brut is a blend of three native grape varieties, Glera, Verdiso and Boschera, which express all the freshness and tradition of the territory. Description
The sparkling wine Tajad Brut, Charmat method, produced by Le Vigne di Alice, is a blend of three indigenous grape varieties that offers freshness and juiciness in the mouth, with fruity aromas that make it tempting to drink. It is part of the "Vintage Line" proposed by Cinzia, and its name comes from a local dialect term for wines with a traditional cut, made from the local Glera, Verdiso and Boschera grapes, which were once served in taverns. Tajad The grapes come from the hills near Vittorio Veneto, at an average altitude of 180-240 metres above sea level, from two different vineyards, called Costa and Sàrmede, characterised by mixed clay and limestone soils of different depths. Doro Nature Prosecco Superiore di Conegliano Valdobbiadene is the 'Brut Nature' version of the Le vigne di Alice winery. The 'Brut Nature' dosage conquers a growing number of enthusiasts for its authenticity and full belonging to the territory of origin. Doro Nature is a line of Prosecco with an unusual and fascinating soul, with a fruity and crisp taste and a lively, fresh and spicy component. The name Doro, comes from the toponym that indicates the area of origin of the grapes. This natural sparkling wine is made exclusively from Glera grapes grown on the hills to the east of the province of Treviso, on the 5 hectares owned by Cinzia Canzan, founder of Vigne di Alice, where trees, shrubs and woods are integrated with the vineyards, respecting and safeguarding biodiversity and the balance of the landscape. At 180 metres above sea level, the grapes are often caressed by the breezes that whip up the summer heat. The clayey-calcareous soils, rich in minerals and well drained, keep the soil cool; these combinations create the conditions for proper ripening, which culminates around mid-September, when the harvest takes place. The grapes are then destemmed and gently pressed, and the must obtained ferments at a controlled temperature of between 18 and 20°C. The base wine obtained matures on its fine lees for 90 days. For the re-fermentation, the cooled must preserved from the harvest is added to the base wine and not exogenous sugars, as is often the case, in order to initiate the prise de mousse in steel autoclaves according to the Charmat method for a period of 45 to 60 days. Assia Rosé Brut Nature is the Charmat method rosé sparkling wine from Le Vigne di Alice, a bold choice for those who like to be bold. Cinzia Canzian boldly blends two local grapes. Glera is a must, along with Marzemino, a red grape from the Veneto region, to add the right touch of colour to this sparkling "pink" wine. The Glera grape is ideal for making sparkling wine and is used to make Prosecco, one of the world's best-selling wines. Its historical origins are vague, but it was certainly cultivated in Roman times. The origins of Marzemino, like those of Glera, are uncertain, but there is no doubt that it is closely linked to the Veneto region. The hills where the vines are planted are part of the pre-Alps hills at an altitude of 200 m. The soil is of morainic origin, and the climate is characterised by cold winters and hot summers, but always caressed by breezes from the north and south, which guarantee the freshness of the grapes, which ripen with the right acidity for the production of quality sparkling wines. Vinification begins with the destemming of the grapes, a process that separates the stalks from the berries, which are then pressed. For Marzemino, however, after destemming, the must is left to macerate on the skins for about 18 hours in order to extract the colour from the red grapes. Once the must has settled, fermentation takes place at a controlled temperature of 18-20°C, followed by refinement "sur lie" for three months, all in steel tanks. Secondary fermentation takes place in steel autoclaves using the Charmat method. This second fermentation is carried out in the traditional way, without the addition of exogenous sugars, only with the must, and lasts for about 45-60 days. In the glass, the pink colour with copper reflexes is bright and seductive, with clean notes of flowers and red fruits, in harmony with notes of geranium, which add a delicate and enveloping touch.
