The sweet white 'Sonnentanz Spätlese' is a still wine label produced by the St. Quirinus winery from Piwi vines, which are resistant to fungal diseases. Because of their resistance to disease, these vines allow the winemaker to limit or eliminate chemical pesticide treatments in the vineyard, which is why they are also called 'super organic'. In a winery like St. Quirinus, where all production is organic or biodynamic, these varieties play an important role in terms of sustainability and health. Sonnentanz Spätlese is an intuitive wine with a smooth and undemanding drinkability, recommended for those who like to drink in company, who like the sweet taste of soft-fleshed summer fruit, with a slightly acidic side dish to balance and enliven the palate. The vineyards are located at an altitude of 600 metres on the sunny slopes of Pianizza di Sopra, cooled by the microclimate of the "Buche di Ghiaccio" (ice holes), a peculiar conformation of the rocks that allows warm air to enter through the cracks at the top and cool air to escape through the cracks at the bottom of these rock formations. The cold air conditions the microclimate around these rocks. The vines are trained using the Guyot method, with low yields of 60 quintals of grapes per hectare at harvest, guaranteeing high quality fruit. After destemming and crushing, the must obtained is fermented in steel tanks at a controlled temperature of 20°C, the natural sweetness being obtained by stopping the fermentation. Maturation lasts six months and takes place in steel tanks. To the eye in the glass, the colour is clear, bright straw yellow. To the nose it releases notes of ripe peach, dried apricot, enriched with melon and candied citrus. The palate is sweet and enveloping, balanced with a pleasant, invigorating acidity that gives a long, harmonious finish. Perfect with sweet and sour Asian cuisine, delicate desserts or as an aperitif.
