After harvesting, the grapes are immediately taken to the cellar and destemmed. Fermentation takes place in steel vats at a controlled temperature of 26°C, with the skins macerating with the must. Maturation lasts about 6 months, during which time the wine remains in large wooden barrels and steel tanks for malolactic fermentation.
