The white wine 'Sauvignon Quirinus' from the St. Quirinus winery takes its name from the grape variety from which it is entirely made, an international variety that is widespread in the regions of north-eastern Italy. Surrounded by mountains, its own vineyards and overlooking Lake Caldaro, the St. Quirinus winery has been in operation since 2013, a young entity in a wine-growing area, a perfect combination for the production of wines with the right potential, such as this Sauvignon Blanc, with character to spare! A lively wine with a fresh palate, an invigorating sip, a nose that cheers with aromas of white-fleshed fruit. The grapes grow at an altitude of about 450-490 metres above sea level, all organically cultivated and biodynamically treated, in the Pianizza di Sopra area, near the town of Caldaro. The south-eastern exposure guarantees warmth for the plants during the day, while the altitude and the mountain climate lower the temperatures considerably in the evenings. The soils are morainic, with limestone and gravel, enriched with porphyry. Harvesting is always done by hand, with a tendency towards delicate work. After destemming and crushing, the must is fermented partly in steel tanks and partly in wooden barrels at a controlled temperature of around 22 degrees. The finished wine is then divided into steel vats, wooden barrels and amphoras for ageing, which lasts about six months. In the glass, the colour is bright, pale straw yellow with green reflections. On the nose it has fresh notes of citrus fruit, with hints of gooseberry and maracuja, and an elegant finish with a hint of aromatic herbs. On the palate, it is vertical, the acidity giving way to mineral notes and a harmonious structure. The finish is persistent. Sauvignon Quirinus' goes well with light starters, fish dishes, asparagus and a selection of cheeses.
