"Cantina Blasi's Grechetto is a white wine that embodies elegance and freshness, pleasant and harmonious on the palate. The wine's uniqueness is reflected in the enveloping scents of white-fleshed fruit that characterise its aromatic profile. The vines are planted on medium clay soils in a hilly area at an altitude of between 300 and 450 metres. The spurred cordon training system helps to optimise the quality of the grapes and guarantees a carefully tended production right from the cultivation phase. In the cellar, the grapes are gently pressed and then transferred to the press. The soft pressing extracts only the free-run juice, which is then fermented at a low temperature (between 14 and 16°C) for about 15 days in steel tanks. Malolactic fermentation is not carried out in order to preserve the freshness and liveliness of the wine. Maturation takes place in steel tanks for about 3-4 months on the fine lees, giving the wine further complexity and structure. The Grechetto is then aged in the bottle for at least 4-5 months, when it reaches its maximum expression of elegance and balance. It is the ideal companion for aperitifs and light dishes, enhancing the flavours with its freshness and versatility.
