Description

Chardonnay, one of the most famous grape varieties in the world, is characterised by its elegance and structure. The grapes are grown on sandy hillside soils at an altitude of 250-300 metres above sea level, using the spurred cordon training system. The must obtained from the soft pressing of the grapes begins its journey of transformation. Fermentation with selected yeasts takes place at low temperatures between 14 and 16°C in steel tanks for about 15 days. For this white wine, Michele opted for a partial malolactic fermentation, followed by a rest in steel tanks for 3-4 months on fine lees, which gives the wine even more roundness. Finally, the wine is aged for 24 months in large 15hl French oak barrels of 4th-5th passage. The result is an elegant and structured white wine with a rich and enveloping palate, fresh with notes of golden apple and pineapple, balanced by a satisfying savouriness that begs for another sip. The long and tasty citrus finish completes the experience with notes of grapefruit and lime. The intriguing complexity of the nose reveals aromas of flowering broom, aromatic herbs, acacia honey and light vanilla nuances. There is no lack of refined, warm aromas of wood and tobacco from the barrel. The ideal accompaniment for first and second courses with fish or white meat.
