Description

Le Cerese is a tribute to the cherry trees that surround the vineyard. The soil is volcanic and clayey at an altitude of about 200 metres above sea level, where volcanic and sedimentary rocks have disintegrated to form lean, deep soils. The vines are trained using the spurred cordon system, with a controlled yield of between 40 and 50 quintals per hectare. This Merlot offers a moderate but constant production, resulting in a lively and fine wine, which in the glass reveals the unique characteristics of the surrounding area, surrounded by olive and fruit trees. The production process begins with manual harvesting of the grapes, followed by crushing and a spontaneous fermentation with the skins for about 10 days. The wine is then aged for two years, partly in large barrels and partly in wood, before being bottled. Le Cerese Merlot presents itself in the glass with an intense ruby red colour. To the nose, it opens with enveloping aromas of sour cherries and red fruits, surrounded by spices and balsamic notes. The palate is dry, pleasantly fresh and savoury, crisp and persistent. The wine's drinkability is remarkable, making it very versatile and suitable for dishes such as baked pasta and roasts. Or more informal pairings such as arrosticini, medium mature cheeses or a simple salami sandwich.
