The "Quirinus Brut" three-bottle case contains the Metodo Classico Brut sparkling wine from the St. Quirinus winery, a young South Tyrolean winery led by Micheal Sinn, a winemaker who is committed to sustainability and organic and biodynamic viticulture. Quirinus Brut is produced from Piwi vines, a term derived from the German Pilzwiderstandsfähig, meaning 'fungus-resistant'. These varieties, which are naturally resistant to fungal diseases, allow the use of chemicals and plant protection products to be minimised, in full harmony with the company's green philosophy. The vineyards are located in Caldaro, in the Pianizza di Sopra area, between 450 and 490 metres above sea level, on calcareous morainic soils rich in gravel and porphyry. The microclimate, influenced by the Buche di Ghiaccio biotope, gives the wines freshness and refined aromas. After manual selection of the grapes, about a third of the must ferments in wooden barrels and the rest in stainless steel. The second fermentation takes place in the bottle, with ageing on the lees for 60 months. In the glass, 'Quirinus Brut' is bright straw yellow in colour, with a fine and persistent mousse. Mineral and citrus notes emerge on the nose, while the palate is creamy, fresh and harmonious. Perfect as an aperitif or paired with fish carpaccio, delicate appetisers and Mediterranean first courses.
