Pecorino Paride d'Angelo
Description
The Pecorino of the young company Paride d'Angelo represents a very fruity version of this vine, enriched with Mediterranean and sometimes almost balsamic expressions, with hints of aromatic herbs. It is a wine of great harmony, freshness and roundness, made exclusively from Pecorino grapes. Recently rediscovered, this variety was in danger of disappearing, but is now becoming a protagonist after years in which it was mainly used for lighter blends. Legend has it that the name has pastoral origins, identifying it as the wine of shepherds. The vines are cultivated in the Pescia hills using the Guyot training system, which excludes the use of synthetic chemical products, both for fertilisation, where only organic substances and manure are used, and for the treatment of fungal diseases. The rediscovery of the vine in the last decades is testified by the young age of the vines, 5 years. The yield per hectare is 100 quintals of grapes at harvest, underlining the winery's focus on quality. Pecorino is vinified by spontaneous fermentation with indigenous yeasts, without the addition of sulphites, after which the wine rests in steel vats where it has fermented on its own fine lees for 6 months, stirred periodically with the batonnage technique. Separated from the lees, the wine rests for another 3 months in steel and in the bottle. In the glass, Pecorino has a straw-yellow colour, enriched with bright reflections that anticipate its freshness. On the nose, Pecorino expresses fruity notes of ripe peach and apricot, combined with mineral touches, which blend harmoniously with a rosemary finish, underlining its aromatic complexity. On the palate, there is a good balance between sweetness and acidity, with a structured sip and a long, enveloping finish that leaves a warm impression. Paride d'Angelo's Cerasuolo d'Abruzzo is a vibrant rosé wine made exclusively from Montepulciano d'Abruzzo grapes, embodying the rich winemaking tradition of the Abruzzo region. Deeply rooted in the history and culture of the region, this rosé is made from an autochthonous vine that originated in the Pescara area. Its intense colour, influenced by the rich anthocyanin content of the vine, is combined with a full and enveloping flavour, which leaves the glass with a crisp finish and hints of red fruit. This Cerasuolo d'Abruzzo is the ideal accompaniment for fresh and light dishes. It goes well with fish, white meat and herbs, or with fresh cheeses. There is a saying: 'Wine is made in the vineyard, not in the cellar'. This is the philosophy of Paride d'Angelo, a small family-run winery, whose aim is to work well in the countryside, respecting the basic principles of nature and organic farming, achieving very high grape quality, so that the wines are not treated in the cellar. The vineyards, located on clay soils on the hills of the Pescara hinterland, are cultivated with the traditional Abruzzo pergola system and have an average age of 45 years, testifying to a constant commitment to respect and care for the vines and the surrounding biodiversity. Vinification is carried out according to traditional methods, with spontaneous fermentation using indigenous yeasts and without the addition of sulphites. Before fermentation, the grapes are gently pressed and remain in contact with the skins for eight hours to extract the necessary amount of colour. At the end of fermentation, the Cerasuolo remains in contact with its fine lees for 6 months to complete its flavour profile, and continues its refinement in steel without lees for 3 months, then in the bottle before release. The deep cherry-pink colour shines in the glass, anticipating an enveloping sensory experience. Paride d'Angelo's Montepulciano d'Abruzzo is a wine that has its roots in the picturesque hills and plains of Pescara that surround the Adriatic coast, the famous area of origin of the most famous Montepulciano d'Abruzzo wines. This wine is the result of a careful selection of Montepulciano grapes, a variety that shares its name with the town of Montepulciano in Tuscany, even though it is not grown there. A direct and authentic expression of the excellent characteristics of the variety, preserved only in stainless steel, the fruit is dynamic, soft and round, contrasting with marine notes that release freshness in a long and satisfying finish. The vineyards, cultivated using the traditional Abruzzo pergola system, have an average age of 65 years and are planted on clayey, south-facing soils. The grapes are carefully selected and vinified in the cellar with a long maceration on the skins for 1 month. During the maceration, fermentation starts spontaneously thanks to indigenous yeasts and the absence of added sulphites. Ageing takes place in stainless steel vats and then in the bottle for a total of 9 months, a choice that allows the terroir to fully manifest itself. In the glass, the light ruby colour with hints of young violets catches the eye and promises an intense sensory experience.
