Born in the hills of Conegliano Valdobbiadene, the Metodo Classico Prosecco Superiore Signature from Le Vigne di Alice is the first Metodo Classico Prosecco label from this interesting winery. A sparkling wine that represents an achievement, a constant challenge and constant research, with aromas of crisp fruit flesh in harmony with buttery and yeasty notes, inviting on the nose, it reveals its full potential on the palate, soft but at the same time lively and slightly salty, with an excellent persistence on the finish. For this selection, Cinzia uses only Glera grapes, vinified in a different way, a return to the origins, with re-fermentation in the bottle, as her grandfather Angelo used to do, because in those days he did not have autoclaves. Le Vigne di Alice is a small, relatively young company, founded about 10 years ago in Vittorio Veneto, a municipality in the province of Treviso. The 5 hectares of the estate are mainly planted with the Glera variety, formerly known as Prosecco and replaced in 2010 to identify the name Prosecco not only as a grape variety but also as a precise area in the north-east of Italy, famous for the production of sparkling wines. The grapes are harvested in mid-September and 20% of the must obtained is fermented in large vats, while the rest ferments in steel tanks without temperature control. Both masses mature on the fine lees for about six months before being blended and bottled (tirage) for the second fermentation. The bottles are kept in rooms at a constant temperature of 14°C for 24 months during the second fermentation. The fine sparkling wine remains in the bottle for a further 32 months before being disgorged. In the glass, it has a straw-yellow colour with greenish reflections, brilliant and with a very fine and persistent sparkle. On the nose it has hints of peach skin, green walnut, almond, peeled apple and delicate herbaceous notes. On the palate, the wine is savoury and mineral to start with, round and closes with a long finish. An excellent accompaniment to fish dishes, both first courses and starters.
