Tenuta Corallo overlooks the prestigious Baia dei Turchi in Otranto, Salento. Its history is interwoven with the events of 1480, when the Turks landed on the beach (hence the name), destroyed Otranto and sacrificed 800 men who refused to renounce their Christian faith. Tenuta Corallo's white wine "Drosia" expresses all its territoriality and rare beauty, with salty notes and Mediterranean balsamic aromas, flower petals such as broom, and a savoury taste reminiscent of the sea, the beach and relaxation. "Drosia is a white wine made from Negroamaro grapes, a red grape variety that until a few decades ago was used to blend wines from France and northern Italy. Today it is used as the main wine in Puglia and neighbouring regions because of its high potential to produce quality wines. The Negroamaro vines are planted around the main part of the estate on clayey/sandy soils and are trained using the spurred cordon method. Harvesting is carried out carefully by hand at the beginning of September with a yield of 70/80 quintals per hectare. Once in the cellar, the red grapes are treated as if they were white, a soft pressing allows the extraction of the must, which is practically colourless, and the addition of selected yeasts starts the fermentation in steel tanks at a controlled temperature of 16°C. The ageing takes place in steel tanks and then in the bottle. Its brilliant colour with greenish reflections is the beginning of an enveloping sensory experience. The nose opens with delicate notes of fresh white flowers, accompanied by subtle mineral tones. On the palate, it is full, round and structured, with a pleasant spiciness that leaves a lingering sensation of freshness. "Thanks to its versatility and aromatic complexity, 'Drosia' is ideal for starters and aperitifs. It also goes well with seafood first courses, risottos and lightly matured cheeses.
