The "Bergwerk" wine from the San Quirinus winery is a red wine made exclusively from grapes of the Schiava Grigia and Schiava varieties, two native South Tyrolean grape varieties, whose name "Vernatsch" means "native" in Latin, proving their origin in the area. In fact, the oldest documents found in the area mention the nobility of this vine. This fresh red wine, with a crisp, drinkable mouth, brightens the nose with delicate aromas of ripe red fruits and finds its best expression in the area around Lake Kaltern. The winery's vineyards are located in the "Feld" and "Lago" parcels, on the slopes overlooking Lake Caldaro, at an altitude of 300 metres above sea level, in an area with warmer, sunnier, south-facing temperatures, conditions favoured by very demanding vines. The soil on which the vines grow is composed of limestone and gravel with granite and quartz inclusions, very common in the surrounding area. The grapes are harvested by hand and destemmed in the cellar before fermentation. Fermentation takes place in stainless steel vats at a controlled temperature of 26°C. The must remains in contact with the skins during the maceration process, as in a normal red wine. Malolactic fermentation is carried out during the six months of ageing in steel vats in order to smooth the acidity and soften the palate. In the glass, the Bergwerk has a bright, light ruby red colour. The bouquet is fragrant, dominated by notes of ripe cherries and fresh raspberries, with a delicate finish of bitter almonds. On the palate, it has a light body, a fresh and harmonious acidity and a medium-long finish. Perfect with hors d'oeuvres, fish and meat dishes, but above all with typical Tyrolean dishes such as speck, cold cuts and polenta, 'Bergwerk' is a convivial and versatile wine.
