Description
The "Savium" three-bottle case from the Alemat winery is dedicated to Piedmont Riesling DOC, an elegant and passionate wine that tells the story and dedication of Savio, the founder of the winery. In Latin culture, the name "Savium" meant a "passionate kiss", a symbol of the passion that guided the creation of this pure Riesling Renano. The grapes come from a plot located at 350 metres above sea level in the municipality of Castelletto Merli, in the province of Alessandria, on a breezy ridge called Bellaria, with north-east exposure. The clayey-loamy, limestone-rich soil gives the wine its unmistakable freshness and minerality. The grapes are harvested strictly by hand and left to rest overnight in crates to preserve their aromatic integrity. After whole bunch pressing, the must ferments at a controlled temperature and ages for about eight months in stainless steel on fine lees, before further ageing in the bottle. In the glass, it is straw yellow in colour, with fruity aromas of white peach and spices. On the palate it is dry, savoury and persistent, a fresh and satisfying sip that invites another. Savium is perfect with fish, shellfish, appetisers and white meats, offering a balance of elegance and harmony.
