Description
The Hastalis three-bottle case contains a wine named after a prehistoric shark, Cosmopolitodus hastalis, in memory of the discovery of one of its teeth during excavations in the vineyard. The Vermentino vines, cultivated using the Guyot system on silty-clay soil with limestone, produce high-quality grapes that are harvested by hand. After fermentation in temperature-controlled stainless steel tanks and 5 months of ageing on fine lees with periodic bâtonnage, the wine acquires softness and complexity. The straw yellow colour with greenish reflections anticipates a bouquet of white-fleshed fruit, with notes of apple, peach and orange blossom.
