Description
The "Coldo" three-bottle case from Cantina Semonte contains: the Metodo Classico "Battista", the Chardonnay and the red "Coldo", the new arrival.
Battista, created from a careful selection of Chardonnay and Pinot Noir grapes and dedicated to Battista, the beloved wife of Federico da Montefeltro, is characterised by rigorous vinification protocols and a long period of ageing on the lees. It shows a bright straw yellow colour, fine and persistent mousse, and a fresh bouquet with notes of apple, white flowers and yeast fragrances.
The Chardonnay, from the hills of Gubbio, expresses balance and harmony. With a delicate, fruity aroma and elegant taste, it is the perfect accompaniment to fish dishes, vegetables, white truffles and red meats.
The red 'Coldo', a pure Merlot with a playful but decisive character, is aged in French oak barriques and releases notes of small dark berries on the nose, with a warm, enveloping and well-balanced palate.

Spumante Brut Metodo Classico "Battista" Semonte
Description
Azienda Agraria Semonte's Metodo Classico 'Battista' is the result of a careful selection of Chardonnay grapes blended with Pinot Noir, giving it body, complexity and remarkable longevity. This sparkling wine, dedicated to Battista, the beloved wife of Federico da Montefeltro, a great figure of the Renaissance, is characterised by rigorous vinification protocols and a long stay on the lees, giving it a character suitable for all occasions. The vineyards are cultivated using the Guyot training system, with a planting density of 6,300 vines per hectare. Situated between 650 and 800 metres above sea level and exposed to the south and west, the vines benefit from a medium-textured calcareous soil, rich in skeleton, and large temperature variations between day and night, which give the wine excellent acidity. The yield is between 50 and 60 quintals per hectare. The harvest takes place in the first ten days of August for the Chardonnay and in the last ten days for the Pinot Noir, which ripens later. Vinification begins with soft pressing of the grapes, followed by decantation into cement or stainless steel tanks. After 24 hours of clarification by decanting, the must is inoculated with selected yeasts in wood or cement vats. Maturation takes place on the fine lees for 6 months, after which the wine is drawn off into stainless steel tanks. The wine remains in the bottle with its own yeasts for at least 20 months. The 'Battista' embodies the elegance and refinement of the Renaissance. It has a bright straw-yellow colour and a fine, persistent perlage. To the nose, it offers a fresh bouquet with fruity notes of apple, accompanied by aromas of white flowers and a hint of yeast. The palate is fresh, harmonious and balanced. Thanks to its versatility, this sparkling wine is perfect for any occasion.Read More

Chardonnay "Monteleto" Semonte
Description
In the picturesque hills of Gubbio, at an altitude of 500 metres above sea level, where the temperate climate and the soil are ideal for growing vines, a wine of extraordinary balance is born. With its characteristic straw-yellow colour, this Chardonnay is an ode to nature and oenological know-how. The vineyard is trained in the Guyot method and has 6300 plants per hectare. The southern exposure and the presence of loose, medium-textured soils with a limestone skeleton give the wine a distinct personality and fruit. Harvested by hand, the grapes are gently crushed before fermenting at controlled temperatures with selected yeasts in stainless steel vats to preserve all the aromatic notes. At the end of fermentation, the wine rests on its fine lees for a period of 6 months, a phase that helps to enhance its complexity and depth. It then matures in the bottle for another 6 months to complete its journey. The delicate and fruity bouquet is followed by an elegant and harmonious taste, which makes this wine particularly suitable for first courses based on fish or vegetables. Its versatility also extends to hors d'oeuvres, charcuterie and cheese platters, first courses with white truffles, pasta with meat sauce and red meats.Read More

Merlot "Coldo" Semonte
Description
Coldo red is the latest label from Semonte, a pure Merlot with a playful character that is not to be underestimated. On the nose it reveals the typical fruity notes of the vine, rich in floral scents, and on the palate it is well structured, thanks to its ageing in wood.
Elegance and power in the glass respect the wild and silent beauty of an area rich in history and unspoilt nature, the hills of Umbria, near the famous city of Gubbio.
The grapes of this international variety come from a single vineyard located in Mocaiana, a hamlet a few kilometres from the winery, at an altitude of 450 metres. The vines grow on marly soils that provide structure and, thanks to the high altitude and temperate climate, the Merlot develops a refined aromatic richness and natural freshness.
The work in the vineyard is carried out with care and respect, with low yields at harvest and manual selection of the grapes between the rows.
In the cellar, the grapes are destemmed and macerated before cold fermentation in steel tanks for 10 days. Fermentation then takes place at a controlled temperature in cement tulip vats, always with maceration on the skins, which remain in contact with the wine during post-fermentation at a high temperature of around 22°C, a temperature that also favours malolactic fermentation.
The wine is then matured for 12 months in French oak barrels of second passage, and continues its journey in the bottle for a further year.
In the glass, 'Coldo' has an enticing ruby red colour, a bouquet of small dark berries, enriched by delicate floral notes with a spicy and smooth background on the finish. On the palate it is warm, enveloping, dry, of great balance and intensity of flavour, with fine, velvety tannins that make it smooth and refined.
It is the ideal red wine to accompany roast meats, structured first courses and mature cheeses.
