Sarica is an authentic testimony of a family tradition that, since 1994, has been surprising connoisseurs with its unique and unmistakable personality. A tribute to the roots and the passion that Marco and Stefano have dedicated to producing wines of excellence. The particular name is a beautiful creation born from the union of the names of the two eldest daughters of Marco and Stefano, the owners of the winery, Sara and Federica. This exclusive wine is the result of an unusual but exciting blend of Syrah and Pinot Noir grapes, which find their ideal habitat in the Pergolese hills, thanks to the special "Mediterranean" microclimate created by the presence of numerous lakes. Thanks to the calcareous composition of the soil, the grapes give the wine structure and intensity, and enjoy ideal ripening conditions during the summer, caressed by the daily breezes that caress the valley. In the cellar, during fermentation with selected yeasts, the must remains in contact with the skins for 30 days in steel tanks, followed by a long ageing in oak barrels for 24 months. The predominance of Syrah is clearly distinguishable in the spicy aromas, sweetened by notes of wild cherry and sour cherry, more typical of Pinot Noir, and a slight hint of vanilla, enhanced by the ageing in barriques. The palate is characterised by a harmonious tannicity that envelops the palate with elegance. A wine with an intense structure, it is very versatile and can be served with braised or stewed meats.
