For several decades now, Pinot Grigio has been the most widely planted grape variety in Trentino, unfortunately sometimes without sufficient attention being paid to the quality and specific characteristics of the territory. Despite this tendency towards a more "industrial" approach, Pinot Grigio remains a highly prestigious grape, often referred to as the "noble variety" in the famous Alsace region. Carefully cultivated on the most suitable soils, Pinot Grigio produces white wines that combine roundness and freshness with good body and elegance. The sandy soils of the Sarca plain, more precisely on the estate known as Le Part, are home to this grape variety, where low yields, no more than 100 quintals of grapes per hectare, and careful vinification ensure the production of a wine of absolute quality. The grapes are destemmed, gently pressed and the must fermented at a controlled temperature with selected yeasts. The wine is then aged for 6 months in stainless steel and reveals a fruity personality with hints of pear. Its richness on the palate, its elegance and fruitiness, its persistence, invite you to take another sip. Le Part is the ideal accompaniment to risotto, even the most elaborate, such as risotto with asparagus.
