Description

The sparkling wine Tajad Brut, Charmat method, produced by Le Vigne di Alice, is a blend of three indigenous grape varieties that offers freshness and juiciness in the mouth, with fruity aromas that make it tempting to drink. It is part of the "Vintage Line" proposed by Cinzia, and its name comes from a local dialect term for wines with a traditional cut, made from the local Glera, Verdiso and Boschera grapes, which were once served in taverns. Tajad The grapes come from the hills near Vittorio Veneto, at an average altitude of 180-240 metres above sea level, from two different vineyards, called Costa and Sàrmede, characterised by mixed clay and limestone soils of different depths. The vines are trained using the Sylvoz pruning system, which is widely used in the Prosecco area, and enjoy a cool, breezy climate with significant temperature variations between day and night. After harvesting, the grapes are destemmed and gently pressed. The fermentation of the base wine takes place in steel tanks at a controlled temperature of 18-20°C. At the end of the process, the wine is refined on the fine lees for about 45 days. The base wine is re-fermented in steel autoclaves according to the Charmat method, for about 45 days, in order to create the beloved bubbles. Pale straw yellow in colour, bright and brilliant, the Tajad Brut has a clear fruity bouquet, particularly of wild apple and pear, enriched by delicate hints of bread crust. On the palate, its fruity character is evident, the sip is full and structured, with an elegant and delicious finish. Tajad Brut is an original sparkling wine, a rare and traditional blend, to be enjoyed with fish dishes, tartares and all types of fried food.
