The 'Orterosse' wine from Tenuta Corallo is a Salento Primitivo that stands out for its enterprising and energetic character. It is a red wine that does not shy away from the expression of wild red fruits, with light tertiary notes from the short aging in wood, enriched with balsamic notes that make the sip fresh and tasty. The Primitivo grape is known for its intensity and body, as well as its high productivity, and in the past it was mainly used as a blending wine. Only recently, thanks to the reduction of yields, the introduction of more precise wine-making techniques and the return to traditional Apulian methods of cultivation, has Primitivo given rise to truly exceptional and high quality products, bringing it back to the attention of the general public. The grapes for 'Orterosse' are cultivated with the 'Cordone Speronato' training system, with an average low yield of 80/90 quintals of grapes per hectare, the roots resting on a deep clayey-sandy soil, without skeleton. Harvested by hand at the end of August, the grapes are destemmed and left to macerate on the skins with selected yeasts for about 8-10 days at a controlled temperature of 26-27°C in steel vats. Maturation takes place in steel and is completed by a short passage in barriques. The Primitivo del Salento "Orterosse" presents itself in the glass with a bright ruby red colour with violet reflections, showing a good visual consistency. Intense aromas of cherry, raspberry and blackberry are elegantly interwoven with enveloping notes of clove, cinnamon and incense on a slightly balsamic background. The palate is fresh, with a pleasant cleanliness and finesse, supported by well-made tannins that are not obtrusive. The good length on the palate is followed by a final note of small fruits and spices, harmoniously blended. A wine that embodies the refinement and strength of the Salento Primitivo. Its balance makes it an excellent accompaniment to various dishes, salami, cheese, red meat and even baked fish.
