Blasi's fresh, youthful interpretation of the Chardonnay-Sauvignon blend is an ode to the vitality and enthusiasm of an enterprising winery. Located in the Umbrian hills of Umbertide, this wine creation embodies the essence of the territory, capturing the harmony between two noble grape varieties. The Chardonnay, grown on sandy soils, gives the wine an extraordinary softness and roundness, while the Sauvignon, from clayey soils, adds a touch of freshness and liveliness. This combination gives the wine an enveloping bouquet, fullness and complexity on the palate. The Sauvignon is harvested from the Altona vineyard and the Chardonnay from the Petrella vineyard, both located in hilly areas with a typical Apennine microclimate, between 300 and 450 metres above sea level. During fermentation, which takes place at a low temperature (between 14 and 16°C) in steel tanks, each variety is kept separate from the others, according to the parcel of origin. The decision not to carry out malolactic fermentation is strategic, in order to preserve the freshness and balance of the wine. Refinement continues in steel vats for 5-6 months on fine lees, which are batonnaged at regular intervals. This is followed by a further period of at least 5-6 months in the bottle to allow the wine to fully express its distinctive and refined personality. An ideal companion for long aperitifs and dinners with friends, this wine is a convincing taster of the oenological riches of Umbria.
