Tenuta Corallo's 'Asteri' rosé interprets the elegance and liveliness of a refined rosé wine made from the prized Primitivo grape, which is grown in Puglia. A pink wine that expresses all its freshness and dynamism in the glass, with aromas reminiscent of the Mediterranean maquis and salt puffs brought in from the sea, thanks to the constant breeze from the Otranto Channel. The Primitivo grape, so called because it ripens earlier than the others, is harvested at the beginning of September; the grapes are destemmed in the cellar, crushed and left to macerate with the must for about 5 hours. The must is then separated from the skins and fermented with selected yeasts at a controlled temperature of 16°C. Aging takes place in steel and in the bottle, preserving the purity and liveliness of the wine. Asteri' has a clear pink colour and a fresh, summery bouquet reminiscent of the Mediterranean maquis, with subtle notes of rose, wild berries and pink grapefruit. On the palate, this rosé is elegant and well-balanced, with an agile mouthfeel and pronounced mineral and saline notes, characterised by a medium-length, slightly acidic finish. It is ideal with savoury starters, fried dishes, seafood soups, white meats and fresh cheeses.
