The story of Olivetani Bianco Veneto IGT is compelling, an authentic creation of Zanovello Selections that unfolds like a fascinating story in the glass. This white wine is the result of a successful blend of Garganega, Pinot Bianco, Sauvignon, Tai Bianco and Moscato grapes, blended according to the ancient traditions of the farmers of the Euganean Hills. Olivetani is inspired by the practice of blending different grape varieties grown together in the family garden. This balanced blend, the result of separate vinifications and careful processing, gives rise to an aromatic white wine that ranges from sweet floral aromas to ripe, exotic fruit aromas. On the palate, Olivetani offers a surprising balance between freshness and savouriness, with a hint of warmth, minerality and persistence. The grapes are grown on volcanic and clay soils at an altitude of 200-400 metres above sea level, with a modest yield of 40-60 quintals per hectare. The winemaking process begins with manual harvesting, destemming, soft pressing and spontaneous fermentation with indigenous yeasts in wood and cement. After two years of spontaneous stabilisation (both protein and tartaric), Olivetani finds its home in large wooden and cement barrels. Straw yellow in colour with bright golden highlights, the nose reveals notes of lemon and sweet citrus, accompanied by hints of exotic fruit, deep balsamic notes and a hint of white pepper. The palate is dry, warm and enveloping, with a persistent but never overpowering mineral profile. The freshness is measured and the finish is rich, with the return of the yellow-fleshed fruit.
