Description

The extraordinary care devoted to the production of this wine led to its official recognition by the Bishopric of Trento on 23 July 1930 as a "Vino da Messa" (Wine of Mass), confirming its authenticity as a "Vino Genuino di Vite prodotto per la Celebrazione del Divine Sacrifice" (Genuine Wine of Vite produced for the Celebration of the Divine Sacrifice). The Pisoni family's Chardonnay wine, handed down from generation to generation, is the result of centuries of dedication and scrupulous attention to viticulture. The grapes come from vineyards situated at 450 metres altitude on the San Siro hill, near the characteristic Romanesque church that bears the same name, on calcareous soils, and are skilfully pruned using the Trentino pergola system; this ensures an annual production of around 100 quintals per hectare. Like all the Pisoni vineyards, the Chardonnay is organically cultivated and hand-picked during the harvest. Fermentation with selected yeasts takes place in steel tanks after soft pressing of the grapes. The San Siro Bianco is refined in steel for 6 months before being released. The resulting Chardonnay is an authentic expression of balance and preciousness. Its straw-yellow colour reveals a fruity bouquet with delicate hints of ripe apple. On the palate, the wine is full-bodied, dry and persistent, with a soft, fresh sip that enchants the senses. From vegetables to white meats, its aromatic profile lends itself to endless culinary possibilities.
