Description
The white wine 'Opera 24' from the San Quirinus winery is a pure Pinot Grigio with the typical acidity of local wines, which keeps the sip lively and invites you to follow it, rich in fruity aromas on the nose, the full expression of the grape variety. Very demanding and difficult to cultivate, it requires a cold climate and suitable soils, but is very popular in the Trentino Alto Adige region of Italy.
St Quirinus is a young company founded in 2013 by Michael Sinn, who is still the brains behind the project, which aims to minimise environmental impact both in the vineyard, with an organic and biodynamic approach, and in the cellar.
The grapes come from vineyards located at an altitude of 350 metres on the southern slopes above Lake Caldaro, in the areas known as "Feld" and "Lago". The vines are planted on calcareous and gravelly soils, enriched with granite and quartz, giving the wine an extraordinary mineral complexity and freshness.
The Pinot Grigio vines for 'Opera 24' are pruned using the counter-espalier training system and the grapes are harvested by hand, with a yield of around 70 quintals per hectare. After destemming and crushing, vinification takes place with 70% of the must fermenting in wooden barrels, 20% in steel tanks and the remaining 10% fermenting with maceration on the skins in amphorae.
In the glass, the colour is straw yellow, enriched with delicate pink reflections. The nose is fresh and complex, with notes of citrus, peach and melon, accompanied by an intriguing hint of exotic fruit. On the palate, the body is full, the acidity is lively and the finish is long and harmonious.
Ideal with starters, risottos, fish and white meat dishes.
