"Tenuta Corallo's red wine "Zoi" is a compelling blend of Primitivo and Negroamaro from Salento, combining the two emblematic vines of Apulia in a harmonious and enveloping combination with notes of ripe red fruit, enriched by the spicy notes of Primitivo combined with the subtle bitter notes of Negroamaro. The grapes come from the clayey-sandy soils typical of the area around the winery and the yield per hectare is around 80/90 quintals of grapes, guaranteeing good quality. Harvesting takes place in the second ten days of September for Negroamaro and earlier for Primitivo, at the end of August. The name "Primitivo", from the Latin "Primativus", refers to its early ripening and dates back to the 1700s, when a famous priest from Gioia del Colle, a town in the area, noticed that a red grape variety ripened much earlier than the others, in mid-August. Vinification takes place in steel tanks, with fermentation maceration of 8-10 days with selected yeasts at a controlled temperature of 26-27°C. The wine is then aged in oak barrels for six months. In the glass, 'Zoi' has a ruby red colour with violet reflections. The bouquet is intense and rich in ripe red fruits, with hints of tobacco and cloves. The palate is firm and direct, with a long finish and well-integrated but never overpowering tannins. This wine shows its full potential with blue and/or ripe cheeses, first courses with mushrooms and truffles, game ragout and red meat. "Zoi" stands out for its culinary versatility and is the perfect accompaniment to rich and savoury dishes.
