Tenuta Corallo's "Simera" red wine is the expression of the traditional Primitivo, harvested when the grapes are slightly overripe, giving a sweet and seductive drink, with sweet aromas of red fruit jam, elegantly combined with the more bitter aromas of cocoa, soft and sensual; a wine of a fully varietal nature. The origin of this extraordinary grape variety, Primitivo, is uncertain; it is thought to have originated in Dalmatia and to have been brought to Puglia by the Illyrians over 2000 years ago. Its origin, which is not fully known, contributes to the mysterious charm and richness of this variety. Tenuta Corallo, like the other varieties, uses a spurred cordon trellis system on predominantly clay soils, which guarantees the highest quality. The grapes are harvested in the first ten days of September, followed by vinification in steel tanks with maceration for 8-10 days using selected yeasts at a controlled temperature of 26-27°C. Maturation in steel completes the process and allows the wine to express its full potential. The deep, intense ruby red colour with garnet reflections is a visual spectacle. To the nose, it has a seductive bouquet of cherry jam and chocolate. The sip is warm, with a fragrant and soft entry, the tannins, considered noble, enrich the palate, with a finish that pleasantly reminds of red fruits. "Simera" is a versatile table wine, to be drunk throughout the meal, but at its best when served with roast meats.
