De Vigili's Tonalite wine is a red wine with an enveloping freshness and a delicate palate, a wine that stands out for its complexity and harmony. It is a wine that is a child of the vintage and, as time goes by, it is becoming more and more the expression of the idea of a red wine from the Dolomites," says De Vigili. The Teroldego grapes come mainly from the Vigneto Pasquari, a cru that is an authentic treasure in the heart of Trentino, in the Piana Rotaliana, at 227 metres above sea level. This land, rich in history, is carefully cultivated according to the guidelines of organic farming, with the traditional Trentino system of double pergola training, which guarantees the Teroldego variety a balance of its natural vigour, achieving an optimal vegetative-productive equilibrium. The grapes are harvested exclusively by hand, with a careful selection of the oldest vines in the vineyard. Vinification of Tonalite follows a traditional red fermentation with maceration on the skins for 8/10 days. Ageing takes place in small oak barrels for 10 months, followed by a further 6 months in the bottle, creating a wine that brings out the best qualities of the variety. Deep and dark red in colour, it is characterised by its tannic softness on the palate, with a fragrant and fruity entry, juicy with a good persistent finish. On the nose, the aromas are distinctly fruity, reminiscent of small red berries, followed by peppery nuances that complement the floral and herbaceous ones. Tonalite has depth of flavour, a companion for roasts, red meats, cheeses and rich dishes.
