Porta del Vento's Luna Calante macerated white wine is made from Catarratto Comune grapes, a grape variety that is widespread in Sicily and other areas of southern Italy and that in recent years, thanks to the hard work of its producers, has become a grape of great value. Luna Calante is warm and elegant on the palate, with an enveloping sip and a remarkable aromatic complexity on the nose, typical of the macerated wines of the area, with notes of ripe fruit and Mediterranean spices. Porta del Vento is located in the province of Palermo, in the municipality of Camporeale, where the vineyards where the Catarratto grapes are harvested are located, at an altitude of 600 metres above sea level, with a north-south exposure, with cool winds and the right amount of sunshine, on sandy soils with the presence of sandstone rocks. Marco Sferlazzo cultivates his grapes like an artisan, using organic and biodynamic methods, manual harvesting and spontaneous fermentation. In the cellar, the grapes are cooled to around 8°C in a cold room before being destemmed and transferred with the must to cement tanks, where they ferment with indigenous yeasts and macerate on the skins for about 30 days, with frequent daily punching down. Luna Calante matures in cement vats for 6 months before bottling and remains in the bottle for at least 4 months before release. The result is a wine of brilliant golden yellow colour, with an intense bouquet rich in complex notes of quince, carob and candied fruit. The palate is warm, elegant and enveloping, supported by an excellent structure and characterised by a perfect balance between oily sensations and a satisfying finish with notes of dried fruit. Perfect with fish couscous, roast tuna, blue cheeses and roast lamb, this Catarratto Bianco stands out for its complexity and ability to best express the characteristics of the terroir.
