Description
"Alla Tua Età'" by Paride d'Angelo is a sparkling wine made from Cococciola, a white grape variety native to Abruzzo. The Cococciola vine, typical of the region, is particularly suitable for the production of sparkling wine due to its high acidity, which is maintained throughout the ageing process. This sparkling wine best interprets the characteristics of Cococciola, with a complex and enveloping aromatic profile, offering freshness, mineral accents enriched with floral scents and a lively sparkle with just the right acidity, resulting in a persistent finish. The vineyards are cultivated on clay soils, organically, with respect for health and the environment, using the Abruzzo pergola system, typical of the region, with an average age of 45 years and southern exposure, which contributes to the production of high quality grapes. Vinification follows the Martinotti or Charmat method, which means that after soft pressing, the grapes undergo a first fermentation in steel tanks to produce the base wine. The second fermentation takes place in an autoclave, a steel tank adapted to work under the pressure created by the carbon dioxide produced during fermentation and retained in the autoclave. The CO2 itself helps to give the wine its distinctive effervescence! The second fermentation of this wine lasts 3 months. The wine is then bottled and ready to be tasted. "Ai Tempi Miei' by Paride d'Angelo is a sparkling wine that stands out because it is 100% made with grapes from the famous black grape variety that is the prince of Abruzzo and central Italy, Montepulciano d'Abruzzo. This sparkling wine embodies the essence of this grape variety in a rosé colour, offering a dynamic and easy-to-interpret sparkling experience, with a lively and persistent perlage and fruity notes enriched with citrus sensations. The estate's vineyards, with an average age of 45 years, are planted on clay soils on the hills of Pescara and are exposed to the sun from dawn to dusk. Thanks to the Abruzzese pergola system, however, the grapes are protected from direct sunlight by the vegetation itself, thus maintaining a high acidity, perfect for the correct ripening of the grapes and the production of sparkling wines. The yield per hectare of grapes at harvest is 90 quintals, which demonstrates the winery's commitment to producing high quality wines. Vinification of "Ai Tempi Miei" begins with soft pressing of the grapes and spontaneous fermentation in steel vats with selected yeasts from the skins of the grapes grown on the estate's plots. Refermentation takes place in autoclaves using the Martinotti or Charmat method. The second fermentation lasts 4 months and gives the wine its elegant effervescence. In the glass, the wine has a light pink colour, reminiscent of the characteristic nectars of Provence. The perlage is intense and discreetly persistent, offering a captivating visual experience. Pecorino Paride d'Angelo
Description
The Pecorino of the young company Paride d'Angelo represents a very fruity version of this vine, enriched with Mediterranean and sometimes almost balsamic expressions, with hints of aromatic herbs. It is a wine of great harmony, freshness and roundness, made exclusively from Pecorino grapes. Recently rediscovered, this variety was in danger of disappearing, but is now becoming a protagonist after years in which it was mainly used for lighter blends. Legend has it that the name has pastoral origins, identifying it as the wine of shepherds. The vines are cultivated in the Pescia hills using the Guyot training system, which excludes the use of synthetic chemical products, both for fertilisation, where only organic substances and manure are used, and for the treatment of fungal diseases. The rediscovery of the vine in the last decades is testified by the young age of the vines, 5 years. The yield per hectare is 100 quintals of grapes at harvest, underlining the winery's focus on quality. Pecorino is vinified by spontaneous fermentation with indigenous yeasts, without the addition of sulphites, after which the wine rests in steel vats where it has fermented on its own fine lees for 6 months, stirred periodically with the batonnage technique. Separated from the lees, the wine rests for another 3 months in steel and in the bottle. In the glass, Pecorino has a straw-yellow colour, enriched with bright reflections that anticipate its freshness. On the nose, Pecorino expresses fruity notes of ripe peach and apricot, combined with mineral touches, which blend harmoniously with a rosemary finish, underlining its aromatic complexity. On the palate, there is a good balance between sweetness and acidity, with a structured sip and a long, enveloping finish that leaves a warm impression. Paride d'Angelo Pecorino is the ideal companion for hors d'oeuvres with fish sauces, grilled fish, main courses with white meats and vegetables, sushi, hors d'oeuvres with cured meats and cheeses.
