The 'A Fondo' three-bottle case from the Le Vigne di Alice winery is dedicated to a sparkling white wine, born from traditional refermentation in the bottle without disgorging. The name itself, 'A Fondo', refers to the characteristic bottle with natural sediment, a symbol of a method that preserves the purity of the wine and enhances its fragrance. Produced with 100% Glera grapes from Cinzia Canzian's vineyards in the hills on the border between Veneto and Friuli Venezia Giulia, it is grown on mineral-rich clayey-calcareous soils typical of the Prosecco area. Yields are limited to 90-100 quintals per hectare, and the manual harvest at the end of September ensures the selection of the best bunches. The process involves two fermentations: the first in stainless steel, where the wine ages for four months on the noble lees, and the second directly in the bottle with the addition of yeasts and must, without exogenous sugars. Pale straw yellow in colour, 'A Fondo' expresses aromas of green apple, white peach, lychee, mint and honeysuckle. The palate is savoury, mellow and balanced, with a persistent and enveloping finish.
