Tenuta Corallo's 'Matrìa' rosé wine, made from pure Negroamaro grapes grown in the picturesque Laghi Alimini area of Otranto, is an authentic summer experience with its unmistakable aromas of crisp red fruit and Mediterranean balsamic undertones. The proximity of the Adriatic Sea gives 'Matrìa' a unique freshness and flavour, making it the ideal companion for the hottest times of the year. The grapes are harvested by hand during the first ten days of September. In the cellar, the skins are macerated with the must for about 7 hours to extract a sufficient but not excessive amount of colour. The skins are then separated from the liquid and fermentation begins with the addition of selected yeasts at a controlled temperature of 16°C, all in steel tanks. Maturation also takes place in steel to preserve the typical aromas of the variety and the freshness of the product. The result is a beautiful cherry-pink goblet, brilliant and inviting. On the nose, aromas of wild strawberries mixed with cherries, enriched by subtle menthol notes. On the palate, the wine is warm and smooth, with a pleasant acid shoulder that gives freshness and savouriness. In the finish, the fruity expression returns clearly, giving Matrìa all the characteristics of a wine ideal for accompanying fish-based first and second courses. A taste experience that captures the authenticity of summer in every sip.
