Tenuta Corallo's Spumante Metodo Classico 'Crusò' is made from pure Negroamaro grapes, vinified in white. It is a true expression of elegance and refinement, with a very fine perlage, decisive and intense fruit, roundness that caresses the palate and ends with the right minerality. Harvested by hand in the first week of August, it preserves the integrity of the grapes and the right acidity, making the most of the characteristics of this extraordinary, eclectic vine, suitable for making great reds, rosés and even sparkling wines, as in this case. It grows on sandy-clay soils and is trained with the spurred cordon system, with a yield of 80 quintals of grapes per hectare at harvest, which helps to obtain grapes of very high quality. The Negroamaro grapes are vinified using the white wine method, with soft pressing and fermentation with selected yeasts at a controlled temperature of 15°C in steel tanks. The base wine thus obtained matures in steel for 5 months before drawing off, which takes place in February-March of the year following the harvest. Bottling and the addition of yeast create the magic of the bubbles. The Crusò matures in the bottle for at least 24 months before being disgorged. In the glass, this Blanc de Noir sparkling wine has a very fine perlage, accompanied by fresh, citrus floral notes, intertwined with nuances of white peach, enriched by fragrant and decisive notes of fresh bread crust, creating a complex aromatic bouquet. The drink is lean and dynamic, full-bodied and tasty, with a long and elegant persistence, enhanced by the pleasant crispness typical of the variety. This Metodo Classico sparkling wine is pleasantly delicate and perfectly suited to sophisticated pairings. Ideal as an aperitif with shellfish, fish and raw seafood, it is also an excellent accompaniment to a complete meal.
