The Pisoni family's Petiz Rosato embodies the long tradition of rosé winemaking in Trentino Alto Adige. Originally made from the historic and much-loved Schiava variety, Petiz is now made exclusively from Merlot grapes grown in the Pergola Trentina system in the Cesure vineyard, which is characterised by silty-sandy soils. After careful destemming, the must is left to macerate on the skins in the press for 3 days. The must is then gently pressed and fermented with selected yeasts to obtain a bright pink wine, fresh and light but with a pleasant structure. After fermentation, the wine is aged in steel tanks for about six months. The Petiz Rosato Vigneti delle Dolomiti is a sweet and elegant wine that releases a delicious strawberry scent, while on the palate it is appropriately acidic, dry and intense, with pleasant raspberry notes. A symbol of summer, this rosé is not only a classic aperitif, but also an excellent accompaniment to elaborate fish dishes such as soups, cacciucco and brodetto. It is also a sophisticated alternative to beer when paired with the queen of Italian tradition: pizza.
