Description
Elleboro' is Podere Conca's only white wine, also inspired by the world of flowers. The name is linked to a flower, a tribute to the discreet and resistant beauty of the Christmas Rose, named after its winter bloom. This label is made from grapes of the international variety Viognier, a grape variety originating in France and cultivated in the milder climates of Italy, including Tuscany, with Chardonnay and Sauvignon Blanc. Elleboro is able to fully express the characteristics of the variety, the aromatic intensity is very evident on the nose, offering very pleasant fruity notes, also with a fresh, lively and persistent drink.
This small parcel of white grapes, we could call it the black sheep, is nestled among the red vines of the Ferruggini parcel, just under 6 hectares, all organically cultivated, with sandy soils formed by lake and later marine sediments. The red grapes are harvested by hand, with selection of the bunches, which are then destemmed and crushed before fermentation begins in steel tanks.
Maturation continues in steel vats, on the fine lees, with regular battonage for four months.
In the glass, Elleboro presents itself with a bright straw-yellow colour, surprising thanks to its nose dominated by notes of yellow summer fruits, such as peach and apricot in the foreground. On the palate, the entry is full and powerful, with a well-defined structure, supported by a wonderful acidity and juiciness that gives the sip liveliness and length.
Versatile and appealing, this white wine is perfect with elegant aperitifs, fish dishes and fresh starters. In the summer months it is the ideal companion for light meals, offering a pleasantly balanced taste experience.
