Piedmont Riesling DOC 'Savium' is produced by the Alemat winery from pure Riesling Renano grapes, a grape variety that originated in the Rhine Valley in Germany and spread to Italy, especially to the northern regions, between the end of the 19th and the beginning of the 20th century. The name "Savium", which means "French kiss" or "passionate kiss" in ancient Latin culture, is a tribute to the passion that Savio, the founder of the company, has for this vine, which he has wanted for years and which has finally found its rightful home on a plot of land at 350 metres above sea level in the municipality of Castelletto Merli in the province of Alessandria, exposed mainly to the north-east, on the ridge of a windy hill called Bellaria. The characteristics of the soil are fundamental to the expression of the vine; the area is composed of clayey-clayey soil with a high limestone content, which gives the wine its characteristic freshness. The grapes, carefully hand-picked, are left to rest overnight in boxes to allow the cool night temperatures to lower the temperature of the grapes. After the grapes are pressed whole, the must is fermented at a controlled temperature. Aging takes place in stainless steel tanks for about 8 months, during which time the wine rests on its fine lees before being bottled. After two months in the bottle, the wine is ready for release. The straw-yellow colour of 'Savium' announces a fruity aroma with hints of white peach and spices, and invites you to discover its dry and savoury taste on the palate. The sip is fresh and satisfying, with a good persistence. Savium is perfect with fish dishes, starters, shellfish and white meats, completing the pleasure of a meal with its elegance and versatility.
