The Chora white wine from Tenuta Corallo smells of summer and exudes enveloping, fresh aromas. With its sweet flower petals and tropical fruits, enlivened by salty nuances, this wine evokes the proximity of the sea and the sea breeze. The winery is located on the beautiful beach of Baia dei Turchi in Otranto, in the picturesque heart of Salento, and offers an exclusive and relaxing experience. A few steps from the sea, the grapes are warmed by the sun, lulled by the waves and caressed by the wind. Chora is made with pure Fiano grapes, one of the most popular varieties in Italy. Originally from Campania, Fiano has spread over the years to Puglia and Sicily. The name 'Fiano' seems to date back to ancient Rome, when a population from Liguria was forced to migrate to Campania, bringing with them plants of the Apuan vine, later renamed Apiano, Afiano and finally Fiano. The vines are trained using the Guyot method, with a medium/low yield of 80/90 quintals of grapes per hectare at harvest, on deep, clayey/sandy soils which, together with other factors, create the ideal conditions for the cultivation of this noble vine. Harvesting takes place at the end of August, followed by vinification, which begins with maceration of the skins on the must for about 5 hours at a low temperature to extract the noble aromas from the grapes. Finally, fermentation takes place at a controlled temperature of 16°C with selected yeasts. The ageing, like the vinification, takes place in steel. In the glass, the wine is limpid, with a straw-yellow colour and golden reflections. The floral aromas of acacia and mimosa blend harmoniously with notes of ripe fruit such as peach, mango and pineapple, followed by a herbaceous finish. On the palate, the wine is dry, warm and supple on the entry, enriched with a long trail of fresh, savoury and persistent citrus flavours that delight the palate on the finish. Chora is an ideal accompaniment to fish dishes, seafood risottos and soups, as well as grilled white meat fish main courses.
