Description

Keraton wine, produced by the Giasira winery, is a monovarietal white wine made from 'polished' Catarratto grapes, an indigenous Sicilian vine, one of the oldest on the island, and an alternative to 'ordinary' Catarratto. Keraton is a wine as savoury, complex and unforgettable as Sicily itself, and a true representation of the region's winemaking tradition. The vineyards are located in the municipality of Rosolini, Contrada Ritillini, in an area with a very mild Mediterranean climate, which allows a lower prevalence of fungal diseases in the grapes and favours organic farming. We are located between 180 and 250 metres above sea level, the training system is spurred cordon with yields of around 70 quintals per hectare. The grapes are harvested by hand in the first ten days of September. In the cellar, the grapes are gently crushed and pressed before fermenting at a controlled temperature, generally around 18°C, in stainless steel tanks to preserve the varietal character and expressiveness of the Catarratto grapes. At the end of fermentation, the wine is left on its lees to refine for about 6 months before being bottled and left to rest in the bottle for at least another 3 months before being released. In the glass, the colour is straw yellow with light greenish reflections. To the nose, Keraton has a complex bouquet that combines intense orange blossom notes with aromas of yellow-fleshed fruit. The palate is elegant and enveloping, with a perfect balance of acidity, minerality and sweetness. The finish is persistent with a light vegetal aftertaste, making for an unforgettable tasting experience. It goes well with vegetarian menus, Sicilian seafood dishes and medium mature cheeses.
