Countercurrent Pinot Grigio is one of the new labels from the De Vigili winery, launched this year. In the heart of the Piana Rotaliana, where the mountain air meets the warm air of Lake Garda, an exclusive Pinot Grigio is born, with an agile and good minerality, fresh and ample, releasing all its inviting floral notes on the nose. This internationally renowned vine, of French origin but very widespread in northern Italy, is cultivated with passion on a small plot of land owned by the De Vigili winery, surrounded by Teroldego vineyards. The average age of the vines is 30-40 years, and they are pruned using the traditional Trentino method of double pergola pruning. The vines are carefully tended to ensure an optimal balance between vegetative growth and fruit production, so that the grapes reach the right degree of ripeness at harvest. These vines produce about 100 quintals of grapes per hectare during the harvest, which is done by hand in the morning during the cooler hours of the day. The grapes are then left to rest in cold rooms to further reduce their temperature and prevent oxidation. Soft pressing of the whole bunch extracts the free-run juice, which is fermented in exhausted barriques. At the end of the process, the wine matures in the same barrels until the following spring, when it is ready to be bottled. Intense straw-yellow in the glass, this Pinot Grigio offers a bouquet reminiscent of flintstone, enriched with sweet notes of white flowers, while on the palate it is enveloping on the entry, with freshness and intense savouriness, inviting the drinker. Controcorrente is excellent as an aperitif or with first courses, especially fish.
