Rosa al monte is a blend of the past and the present, with a majority of Sangiovese and a small percentage of Pugnitello, an ancient indigenous Tuscan grape, so called because the grapes resemble a small fist, rediscovered a few years ago thanks to experiments carried out by the Universities of Pisa and Florence. A wine with an intense claret-pink colour, the bouquet is enveloping, with predominant fruity notes of red fruits such as plum, black cherry and blackberry, accompanied by delicate floral nuances of violet. A soft rosé, with good acidity that makes it fresh and balanced, with mineral nuances that recall the stony soil in which the vines are planted. In fact, the vines are planted on a clayey, sandy and skeletal soil at an altitude of 100 metres. The vines are trained using the Guyot system, which guarantees a density of 5,000 vines per hectare and a production of 1.5 kg per plant, with a yield of 75 quintals per hectare. The grapes, the result of a careful selection in the field, are harvested exclusively by hand in the last days of August in order to maintain the right acidity. The must is left to macerate with the skins in the press for a few hours before being separated. After clarification for 24 hours at a low temperature, fermentation begins in stainless steel vats at a constant temperature of 18/20°C. Maturation continues in stainless steel barrels for 5 months.
