Description
The 'Voria' three-bottle case includes the sparkling rosé wine from the Porta del Vento winery, made from Perricone grapes with a small percentage of Grillo and Catarratto, grown according to organic and biodynamic principles. The vineyards are located in Camporeale, at 550 metres above sea level, on sandy soils with sandstone, facing north and characterised by significant temperature variations. The vines, trained on espaliers, produce around 80 quintals per hectare. Harvesting is done manually at the end of August, when the acidity of the grapes is optimal. The grapes are cooled, destemmed and gently pressed; fermentation is spontaneous with indigenous yeasts. The base wine matures for 3 months in concrete tanks on the noble lees, then is bottled with must for refermentation. It is neither filtered nor disgorged, presenting a natural yeast sediment. In the glass, it displays bright colours with green or purple reflections. The nose opens with aromas of cherries, wild strawberries and rose petals, with spicy nuances. On the palate it is fresh and lively, with fine bubbles and a savoury, slightly almondy finish. Perfect as an aperitif or paired with fish risottos, white meats and Sicilian appetisers.
