Description

The Biblis wine from the Trezero winery is a macerated white wine that stands out for its structure and aromatic complexity. It is made from 100% Soreli grapes, a grape variety resistant to fungal diseases, recently created in Italy by crossing European grape varieties with American ones in order to obtain the fungal resistance characteristic of the American grape. 
Trezero is the first company in the Friuli Venezia Giulia region to cultivate and vinify only resistant vines, a not insignificant detail considering that sustainability is the company's watchword, and with Piwi, less energy consumption and CO2 emissions are guaranteed, as well as greater respect for the environment and less land and energy consumption. 
The vineyards are located in Valvasone Arsene, in the Friulian plateau, an area also known as the "Grave", of alluvial origin, formed by the accumulation of debris carried downstream by the surrounding rivers. 
The soils are loamy-clayey and rich in skeleton.
Harvesting is always done strictly by hand, when the grapes are slightly overripe to obtain a higher concentration of sugars. 
During fermentation, the must remains in contact with the skins for a short time, after which the skins are partially removed. In this way, the 'Biblis' remains on the skins for about six months before being completely separated, filtered and bottled.
This macerated white is an intense golden yellow, a sign of the long maceration and the development of the fruit at harvest.
The nose is a sensory experience, with sweet notes of candied citrus, combined with acacia honey and resinous accents reminiscent of beeswax. A bouquet that invites you to taste it.
In the mouth, the entry is full and structured, with a subtle but present tannin that supports and enhances the sip. The finish is long, persistent and harmonious, with a pleasant blend of softness and freshness. 
A wine that goes well with mature cheeses with mustard, lard and savoury preparations, but also with extra dark chocolate and rich pastries, such as a Sicilian cannolo.
