The sparkling wine "Voria" is a bottle-fermented wine proposed by the Porta del Vento winery in a rosé version, obtained from grapes of the indigenous black berry variety Perricone, with a small percentage of Grillo and Catarratto, cultivated according to the principles of organic and biodynamic viticulture, the cardinal principles of Marco Sferlazzo, who has always been attentive to the search and balance of the land and the preservation of biodiversity. Voria Rosé is an uncomplicated, territorial and playful label, easy and pleasant to drink, rich in aromas of red fruits and flower petals. The vines benefit from the specific microclimate of the Camporeale area, at an altitude of 550 metres above sea level, with high temperature ranges and plenty of ventilation. The rows of vines face north and are planted on sandy soil enriched with sandstone. The vines are espaliered, allowing a yield of about 80 quintals of grapes at harvest, which is done manually in boxes at the end of August, when the berries have the right acidity for sparkling wine. The grapes are cooled to 8°C in the cellar before destemming and are then gently pressed to ensure low colour extraction for the production of rosé wine. Fermentation takes place spontaneously with indigenous yeasts at a controlled temperature. The base wine matures on the lees for 3 months in cement tanks before being bottled with the addition of the must necessary for refermentation. Voria is released without filtration and without degorging, so that the yeasts present in the bottle are responsible for the presence of sediment and a slight haze. In the glass, the wine is bright, with green and purple reflections. The bouquet is intense with fruity notes of cherries and strawberries, enriched by floral notes of rose petals and geranium, with a slightly spicy finish. On the palate, the wine is fresh and lively, with a very pleasant fine bubble and a savoury, slightly almond finish. Perfect as an aperitif, it is ideal with fish risottos, white meats and typical Sicilian hors d'oeuvres. This sparkling wine is an excellent choice for those looking for a natural, lively wine.
